Pumpkin Puffs
Ingredients:
- pumpkin puree - 15 ounce can
- sugar - 1/2 cup
- brown sugar - 1/4 cup
- eggs - 2
- vanilla extract - 1 t
- evaporated milk - 3/4 cup
- flour - 2/3 cup
- pumpkin pie spice - 2 t
- salt - 1/4 t
- baking powder - 1/4 t
- baking soda - 1/4 t
- flour - 1 1/2 cups
- baking powder - 1 t
- cream cheese - 8 ounces
- powdered sugar - 1/2 cup
- milk - as needed
- Canola oil for frying -
Instructions:
In a bowl, mix together until smooth pumpkin, sugar, brown sugar, eggs, vanilla, evaporated milk, 2/3 cup flour, pumpkin pie spice, salt, 1/4 t baking powder and baking soda. Mix in 1 1/2 cups flour and 1 t baking powder, until it’s fully blended. Mixture will be the consistency of peanut butter.
Use a tablespoon carefully drop dough into preheated 350 degree oil fry until golden brown. Drain on paper towel lined plate. Cool and fill.
Prepare filling -- in a bowl mix together powdered sugar and cream cheese, add enough milk for mixture to squeeze through pastry bag. Fill pastry bag with the filling, add a pastry tip. Carefully poke pastry tip into the puff and fill puff with filling. Roll puff in powdered sugar, serve.
