Baked Halibut or Cod
Ingredients:
- halibut or cod - 1 1/2 pound
- panko bread crumbs - 1/2 cup
- butter, melted - 2 T
- salt and pepper - to desired taste
- chopped chives - 1 T
- canola or olive oil - to coat baking pan
Instructions:
Remove the skin from the fish, sprinkle fish with salt and pepper and place it in a baking dish, coated with oil. Combine bread crumbs with butter until well coated, evenly spoon crumb mixture over entire top of fish.
Bake in a preheated 400 degree oven for 20 minutes for fish cut 1 inch thick; 30 minutes for fish cut 1 1/2 inches thick. Fish should flake with a fork when done. Sprinkle with chopped fresh chives; serve.
