1/4 c honey
1 T freshly squeezed lime juice
1 t chili powder
1/8 t cayenne pepper
Four 6-ounce salmon fillets
salt and freshly ground black pepper (to desired taste)
2 whole scallions, minced
Place oven rack 6 inches from broiler element and heat broiler. Place heavy duty foil on top of broiler pan fold up sides to hold in the glaze.
In a bowl, stir together honey, lime juice, chili powder and cayenne, set aside. Set aside 2 T glaze for serving.
Pat salmon dry with paper towels and season with salt and pepper. Lay salmon (skin-side down) on foil pan, space 1/2 inch apart. Brush half of glaze evenly over salmon, after 5 minutes of broiling brush remaining glaze over salmon.
Broil until all but very center of fish has turned from translucent to opaque and flakes away easily, 10-12 minutes.
Before serving drizzle reserved glaze over salmon and sprinkle with scallions.
