Grilled Shrimp
Ingredients:
- uncooked prawns, of choice, peel, devein, rinse - 1 1/2 pounds
- salt and pepper -
- olive oil -
- Roasted garlic-cilantro sauce --
- garlic, top trimmed off - 1 small head
- chopped fresh cilantro leaves - 1 cup
- lime juice - from 1 lime
- dry white wine - 1 T
- olive oil - 3 T
- dry chili flakes - 1 T
Instructions:
Pat pawns dry; season with salt and pepper. Place prawns in refrigerator until ready to grill.
Trim the top of the garlic head off, leaving the garlic intact. Drizzle generously with olive oil. Roast garlic in a preheated 400 degree oven for about 10 - 15 minutes or until slightly tender and fragrant. Remove from oven, cool briefly. Peel and crush roasted garlic as finely as possible.
Prepare roasted garlic cilantro sauce -- in a small bowl, combine roasted garlic, cilantro, lime juice, white wine, olive oil and chili sauce. Whisk together; set aside.
Lightly oil and heat a cast-iron grill or griddle to medium-high. Coat the prawns with a little olive oil, grill for 3 - 4 minutes on each side. (Char the prawns, but DO NOT over cook.)
Remove grilled prawns, place in a serving bowl, coat well with roasted garlic-cilantro sauce.
Serve with pasta or rice; or as a appetizer.
