Honey Shrimp
Ingredients:
- vegetable oil - 1 c
- sugar - 1/2 c
- walnut halves - 1/2 c
- mayonnaise - 3 T
- honey - 1 1/2 t
- sweetened condensed milk - 1 1/2 t
- medium shrimp, peeled and deveined - 1 pound
- Kosher salt and freshly ground black pepper - to desired taste
- egg, beaten - 1
- cornstarch - 1/2 c
Instructions:
In a saucepan over medium high heat, bring 1/2 c to a boil. Add sugar, stirring constantly, until golden and thickened, add walnuts, gently toss to combine. Place walnuts on a parchment paper lined plate; set aside.
Whisk together mayonnaise, honey and condensed milk; set aside. Season shrimp with salt and pepper. Heat oil in a skillet over medium high heat. Dip the shrimp into the egg, coat with cornstarch.
Heat oil in a skillet, add 8 - 10 shrimp, fry until evenly golden brown and crispy, 1 - 2 minutes on each side. Transfer to a paper towel lined plate. Continue cooking all the shrimp.
In a bowl, combine shrimp and honey mixture, sprinkle walnuts over top. Serve immediately.
