Lime Shrimp
Ingredients:
- peeled and deveined jumbo shrimp - 1 1/2 pounds
- ground cumin - 1/4 t plus 1/8 t
- kosher salt and freshly ground black pepper - to desired taste
- extra virgin olive oil - 2 t
- garlic cloves, crushed - 5
- lime juice - 2 T
- chopped fresh cilantro - 3 - 4 T
Instructions:
Season shrimp with cumin, salt and pepper.
In a skillet over medium high heat, add 1 t oil and 1/2 the shrimp. Cook undisturbed for 2 minutes. Turn shrimp over and cook until opaque, 1-2 minutes. Remove and place on plate. Add 1 t oil and rest of shrimp, cook undisturbed for 2 minutes. Turn shrimp over, add garlic, cook until the shrimp is opaque, 1-2 minutes. Return the first batch of shrimp to the skillet, carefully mix well and remove pan from the heat.
Drizzle lime juice over shrimp, add cilantro, toss and serve.
