Lime Shrimp Cups
Ingredients:
- wonton wrappers - 24
- olive oil - 2 T
- shrimp, peeled and deveined - 24 medium
- salt - 1/2 t
- chili powder - 1 t
- limes - 2
- baby arugula leaves - 1/2 cup
- sour cream - 3 T
Instructions:
Prepare wonton cups -- lightly brush wontons with 1 T olive oil then arrange in 24 mini muffin cups. Bake in preheated 350 degree oven for 5 - 7 minutes, until golden brown and crisp.
Prepare shrimp -- toss together shrimp, 1 T olive oil, salt, 2 t lime zest and chile powder; place on baking pan. Bake shrimp until opaque throughout, 5 - 8 minutes. Fill each wonton with a few arugula leaves, a small dollop of sour cream, one shrimp; top with a spritz of lime juice.
Wonton shells can be made a day in advance; store in a airtight container at room temperature.
