Lime Shrimp Kebabs
Ingredients:
- jumbo raw shrimp, peeled and deveined - 32
- garlic, crushed - 3 cloves
- limes, cut into 24 very thin slices - 3 large
- olive oil cooking spray -
- kosher salt - 1 t
- ground cumin - 1 1/2 t
- chopped fresh cilantro, diided - 1/4 cup
- bamboo skewers, soaked in water for 1 hour - 16
- lime, cut into 8 wedges - 1 for garnish
Instructions:
Spray grill grate with oil and heat grill to medium heat. Season shrimp with garlic, cumin, salt and half of the cilantro.
Beginning and ending with shrimp, thread shrimp and folded lime slices onto 8 pairs of parallel skewers. (makes 8 kebabs total). Grill shrimp, turn occasionally, until shrimp is opaque throughout, about 1 - 2 minutes on each side. Before serving garnish top of shrimp with cilantro and fresh squeezed lime juice.
