Salmon Patties
Ingredients:
- salmon filet, baked and cooled - 8 - 10 ounces
- almond flour - 1/2 cup
- onion, minced - 1 small
- garlic, minced - 1 clove
- eggs - 2
- shredded sweet potatoes - 1/4 cup
- fresh ground pepper - to desired taste
- coconut oil - for frying
Instructions:
In a bowl, flake salmon with a fork, mix in eggs, garlic, flour, potatoes, onion, garlic and pepper.
In a skillet, heat oil over medium-low heat. Form salmon mixture into 3 inch patties, 1/2 inch thick, place in skillet, fry for 3 - 5 minutes on each side until lightly brown.
