6 (6 ounce) center cut salmon fillets
2 T olive oil
Kosher salt
Freshly ground black pepper
Drizzle salmon with olive oil and season with salt and pepper. Grill over medium high heat 6 to 8 minutes per side, until salmon is cooked through and flakes easily.
Prepare sauce before grilling salmon.
1 c plain Greek yogurt
1 cucumber, seeded, grated and squeezed dry
2 T fresh lemon juice
1 T chopped mint leaves
1/4 t ground cumin
pinch of cayenne pepper
In a bowl combine yogurt, cucumber, lemon juice, mint, cumin and cayenne pepper.
Add salt to desired taste. Spoon sauce over the salmon fillets. Enjoy
