Spicy Beer Shrimp
Ingredients:
- olive oil - 1 T
- butter - 2 T
- chopped onion - 1/2 cup
- beer - 2/3 cup
- tomato paste - 2 t
- sweet chili sauce - 1/4 cup
- fresh cilantro - 1 T
- cayenne pepper, optional - pinch
- raw shrimp, peeled, deveined, patted dry - 1 pound
Instructions:
In a skillet, melt together oil and butter, add onion and cook until soft, about 5 minutes. Add beer, tomato paste, chili sauce, cilantro and cayenne pepper; bring to a boil.
Add shrimp in a single layer (DO NOT crowd) in the pan. Cook for 3 minutes. Flip cook shrimp, another 3 minutes, until the shrimp is pink and cooked through. (Time will vary depending on size of the shrimp.) Serve with rice or baked sweet potato.
If using precooked shrimp, place shrimp in the sauce just until heated through.
