Blueberry Snack Balls
Ingredients:
- dates, pitted - 10
- raw almonds - 1/4 cup
- raw cashews - 1/4 cup
- vanilla extract - 1 tsp
- almond butter - 1 T
- frozen wild blueberries - 1/3 cup
- shredded coconut -
Instructions:
In a food processor, pulse dates, nuts, vanilla and almond butter. Add frozen blueberries, pulse until blended.
With wet hands, roll mixture into eight balls. Place in the freezer for 1 hour or until frozen. Remove from freezer and roll balls in coconut. Store in a airtight container in the refrigerator.
