Pineapple Kabobs
Ingredients:
- pineapple - 1
- cooking oil -
- plain yogurt - 1 c
- honey - 3 T
- fresh chopped mint - 1 T
- 8 - 10 bamboo skewer - soak in water for at least 5 minutes
Instructions:
Slice the pineapple into quarters avoid the core. Discard core and slice pineapple into 2x2 inch squares.
Dry skewers and coat with cooking oil. Spear the pineapple onto the skewer, about 5 pieces of pineapple per skewer. Grill kabobs 4 minutes or until lightly chard. Turn over and grill for another 3 to 4 minutes until lightly chard.
Place on serving plate, garnish with mint. In a bowl mix together yogurt and honey; serve with kabobs.
