Cadbury Easter Cupcakes
Ingredients:
- cake flour or 2 1/4 c flour - 2 1/2 c
- sugar - 1 2/3 c
- butter, soft - 3/4 c
- cocoa powder - 2/3 c
- chocolate fudge instant pudding - 1 (3.4oz) package
- water - 1 1/4 c
- baking soda - 1 1/4 t
- baking powder - 1/4 t
- salt - 1 t
- vanilla - 1 t
- eggs - 3
- Cadbury Eggs (frozen - 24
- butter, room temperature - 1 1/2 c
- powdered sugar (more to thicken) - 5 - 6 c
- almond extract - 1 t
- vanilla extract - 1 t
- salt - 1/4 t
- milk - 2 - 3 T
- food coloring of choice -
Instructions:
In a bowl combine flour, sugar, butter, cocoa, pudding, water, baking soda, baking powder, salt, vanilla and eggs, beat for 1 minute on medium-high until fully mixed.
Fill cupcake liners 1/4 - 1/3 full and place a Cadbury Egg (thick side down) in the middle of the batter. Place another 1 - 2 t batter on top.
Bake in preheated 350 degrees for 18-20 minutes (test for doneness by inserting a toothpick on the side of the cupcake). Cool completely before frosting. Prepare buttercream frosting --
In a bowl cream butter, add powdered sugar 1 cup at a time. Beat in extracts, salt and milk. Add more powdered sugar or milk until desired consistency. Pipe frosting onto cupcakes.
