Vanilla Peach Jam
Ingredients:
- fresh peaches, peeled and chopped - 8 c
- lemon juice - 1/4 c
- vanilla bean - 1
- sugar - 2 c
- bourbon - 1 T
Instructions:
In a heavy bottomed pan combine peaches, lemon juice and sugar, slice vanilla bean in half lengthwise. Use the flat side of a knife scrape out the seeds and add the seeds and empty pods to the pan. Bring to a boil, then reduce to simmer, add Bourbon. Simmer for 1 1/2 hours; stir occasionally. Peaches will turn a golden, caramelized orange color. Cool slightly, (discard bean pods) ladle into jelly jars, seal. Cool completely, store in the refrigerator. It will thicken as it cools.
Serve on toast, waffles, yogurt, etc. Warm and serve over oatmeal, ice cream, etc.
