Asparagus and Ham Egg Cups
Ingredients:
- thin deli ham - 3 slices
- eggs - 2
- salt and pepper - to desired taste
- roasted asparagus - 15 spears
Instructions:
Grease 3 sections of a muffin tin and place a slice of ham in each section to form a pocket. Scramble eggs with salt and pepper. Evenly distribute eggs into the 3 ham cups.
Cut the asparagus spears into 3 - 4 sections. Place about 5 spears in each cup save the tops of the asparagus to lay across the top of cup.
Bake in a preheated 375 degree oven for 15 - 18 minutes.
