Baked Fajita Chicken
Ingredients:
- boneless, skinless chicken breast - 3 - 4
- taco seasoning - 1 - 2 t
- bell pepper, sliced thin (assorted colors) - 2
- red onion, sliced thin - 1
- olive oil - 1 - 2 T
- shredded Mexican Blend cheese - 1/2 cup
Instructions:
Trim fat from the chicken, lay chicken in a single layer in a glass baking dish. Sprinkle taco seasoning over the chicken breast. Evenly lay onions and peppers on top of the chicken. Drizzle olive oil over the peppers and onions. Sprinkle cheese over the top.
Bake in a preheated 375 degree oven for 35 - 45 minutes or until chicken is cooked though.
