Baked Sweet Potatoes Topped with BBQ Chicken
Ingredients:
- sweet potatoes, scrubbed, pierce skin with a knife or fork - 4
- chicken breasts, cooked, skinless, boneless, shredded - 1 pound
- barbecue sauce, your favorite - 1 cup
- green onions, chopped - 2 - 3
- shredded cheese, your choice - for garnish
Instructions:
Wrap sweet potatoes with foil. Bake in preheated 425 degree oven 30 - 60 minutes, until softened. Cool for 10 minutes.
In a saucepan over medium heat, add 1/2 c barbecue sauce heat for 2 minutes, add chicken and toss to coat. Cook for 5 minutes, until chicken is heated through. Add additional barbecue sauce, as needed, to keep chicken moist while cooking.
To serve -- top sweet potato halves with chicken and green onions. Sprinkle cheese over top.
