BBQ Chicken French Bread Pizza
Ingredients:
- oil - 2 T
- French bread - 1 loaf
- boneless, skinless chicken breasts, cut into small pieces - 2
- Lawry's Seasoning Salt - 1 t
- fresh ground pepper - to desired taste
- BBQ sauce, divided - 1/2 cup plus 3 T
- marinara sauce - 1/4 cup
- thinly sliced red onion - 1/2 cup
- fresh mozzarella cheese, shredded - 8 ounces
- shredded cheddar cheese - 1/2 cup
- chopped cilantro - 2 T
Instructions:
Place oil in a skillet and place on medium-high heat. Saute chicken until almost cooked through. Season with salt and pepper as it cooks. Add 3 T BBQ sauce, reduce heat to medium, continue simmering for 3 - 4 minutes, until chicken is thoroughly cooked and sauce has thickened. Remove skillet from heat; set aside.
In a bowl combine 1/4 c marinara and 1/2 c BBQ sauce. Cut French bread in half and place on a foil lined baking sheet. Coat each half of bread with the sauce mixture. Divide chicken evenly between bread. Top with sliced red onions. Sprinkle with both cheeses over top.
Bake in a preheated 425 degree oven for 10 - 12 minutes, until cheese is melted and bubbly. Before serving top with chopped cilantro. Let pizza rest for about 5 minutes, slice and serve.
