1 loaf Ciabatta bread, horizontally cut in half
4 T butter
3 cloves garlic, minced
12 ounces fresh mozzarella cheese, sliced
1/2 c balsamic vinegar
2 medium tomatoes, sliced
salt and black pepper, to taste
1/3 c chopped fresh basil
Place bread on a large baking sheet with cut side up.
In a bowl, combine butter and garlic and spread on bread halves. Place mozzarella cheese slices on top of the bread. Bake at 400 degrees for 12-15 minutes or until cheese is melted.
In a small saucepan bring balsamic vinegar to a boil, lower heat and simmer, stir occasionally, until the mixture is reduced by half (about 5-7 minutes). Set aside.
Remove the bread from oven. Top bread with tomato slices. Season with salt and pepper, to taste. Add basil and drizzle with balsamic. Cut into slices and serve.
