Cauliflower Pizza Crust
Ingredients:
- shredded cauliflower - 2 1/2 cups
- egg - 1
- finely shredded mozzarella cheese (or cheese of choice) - 1 cup
- dried oregeno - 1 tsp
- dried minced garlic - 1/2 tsp
- onion salt - 1/2 tsp
- marinara OR pizza sauce (of choice) - 1/2 cup
- finely shredded cheese (of choice) - 1/2 cup
- topping ingredients (of choice) -
Instructions:
Prepare crust -- microwave cauliflower (will shrink after cooking) for 8 minutes; cool. In a bowl, mix together cauliflower, egg, mozzarella cheese, oregano, garlic and onion salt. Pat mixture into a 9 to 12-inch round greased pan. Spray crust lightly with nonstick spray and bake in a preheated 450 degrees for 15 minutes (or until golden). Remove crust from oven; turn oven to broil.
Spread sauce over baked crust, leave a 1/2 inch border around the edge. Sprinkle 1/4 c cheese on top. Add your choice ingredients on the pizza. Sprinkle 1/4 c cheese over the top. Broil pizza 3 - 4 minutes, until cheese is melted and bubbly. Slice, serve hot.

Pesto, thin sliced tomatoes and fresh mozzarella.
Alfredo with sausage, mushrooms, Provolone and Asiago cheese.
Barbecue sauce, shredded chicken, green onions and Smoked Gouda.
Canadian bacon and pineapple tidbits.
Pizza sauce, grape tomatoes (cut in half), garlic and red pepper flakes. Just before serving sprinkle with basil.
