Chicken Stir Fry
Ingredients:
- olive oil - 3 T
- chicken breasts, cut into 1 inch cubes - 2 pounds
- asparagus, trimmed, cut into 2 inch pieces - 2 cups
- kale leaves - 2 cups
- sliced carrots - 1 cup
- broccoli florets - 1 cup
- sweet pepper, diced - 1 largge
- onion, diced - 1 large
- garlic, minced - 3 cloves
- halved cherry tomatoes - 1 cup
- minced fresh parsley - 2 T
- Cajun seasoning - 1 tsp
- salt and pepper - to desired taste
- sliced almonds, toasted - 3/4 cup
Instructions:
In a large skillet, over medium-high heat, heat oil until shimmering. Add chicken, asparagus, kale, carrots, pepper, onion and garlic; cook, stir frequently until vegetables are tender and chicken is cooked, about 10 minutes. Reduce heat to low, stir in tomatoes, parsley, Cajun seasoning, salt and pepper.
Cover skillet, let stand 5 minutes. Sprinkle toasted almonds over the top.
Serve warm with hot rice.
