Cowboy Quiche
Ingredients:
- unbaked deep dish pan pie crust - 1
- yellow onions, sliced - 2 whole
- butter - 2 T
- bacon - 8 slices
- eggs - 8
- heavy cream OR half and half - 1 1/2 cups
- salt and pepper - to desired taste
- grated sharp cheddar cheese - 2 cups
Instructions:
In a skillet, melt butter, add onions cook over medium low heat for 15 - 20 minutes, stir occasionally, until the onions are deep golden brown; set aside to cool. Fry bacon until chewy, chop into large bite sized pieces; set aside to cool. Roll out pie crust and press it into a large fluted deep tart pan or a deep dish pie pan. In a bowl whip the eggs, cream, salt and pepper, mix in onions, bacon and cheese. Pour mixture into pie crust.
Place the pan on a rimmed baking sheet, cover lightly with foil. Bake in a preheated 400 degree oven for 40 - 45 minutes. Remove foil, bake another 10 - 15 minutes, or until the quiche is set and crust is golden brown. (Quiche will still seem slightly loose, but will continue to set once remove from the oven.) Remove from the oven and let rest for 10 - 15 minutes. Cut into slices with a serrated knife; serve hot with Texas toast.
