Crock Pot Cashew Chicken
Ingredients:
- chicken breasts, cut into bite size pieces - 2
- broccoli, cut into bite size pieces - 1 - 2 c
- carrots, sliced - 1 c
- cashews, roasted - 1/2 c
- olive oil - 1 T
- soy sauce - 1/2 c
- rice wine vinegar - 4 T
- ketchup - 3 T
- brown sugar - 1 T
- garlic clove, minced - 1
- ginger paste - 1 T
- red pepper flakes - 1/4 t
- salt and pepper - to desired taste
- water or chicken broth - 1/2 c
Instructions:
In a crock pot, layer chicken, cashews and vegetables. In a bowl combine remaining ingredients except broth and pour over the chicken. Add enough water or broth so mixture is almost completely covered.
Cook on low 4 - 8 hours or on high for 2 - 4 hours.
