Fajitas
Ingredients:
- chili powder - 1 T
- paprika - 1/2 T
- onion powder - 1/2 t
- garlic powder - 1/4 t
- cumin - 1/4 t
- cayenne pepper - 1/8 t
- sugar - 1 t
- salt - 1/2 t
- corn starch - 1/2 T
- onion, cut into 1/4 - 1/2 inch strips - 1 large OR 2 medium
- green bell peppers, cut into 1/4 - 1/2 inch wide strips - 2
- red bell pepper, cut into 1/4 - 1/2 inch strips - 1
- chicken breast, sliced into thin strips - 1 pound
- vegetable oil - 2 T
- lime - 1
- tortillas 6 inch - 8
- sour cream - 1/2 cup
- cilantro - 1/4 bunch
Instructions:
Prepare fajita seasoning -- in a small bowl combine chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, salt and corn starch; set aside.
Place onion, green and red bell peppers and chicken in a 13 x 9 inch casserole dish.
Sprinkle seasoning over meat and vegetables. Drizzle vegetable oil over everything, toss ingredients together until everything is well coated in oil and seasoning. Bake in a preheated 400 degree oven for 35 - 40 minutes, stirring half way through. Remove from oven, squeeze juice from half of a lime over the meat and vegetables.
Place a small amount of meat and vegetables in the center of each tortilla. Top with cilantro, a dollop of sour cream and lime juice.
