4 baking potatoes
Extra Virgin Olive Oil
1/2 c onions, minced
2 cloves garlic
1 pound ground beef
1/4 c ketchup
2 T mustard
1 T Worcestershire sauce
hot sauce – to desired taste
salt and freshly ground black pepper – to desired taste
1 c cheddar cheese
Rub potatoes with olive oil and bake potatoes at 400 degrees for 40-45 minutes. Set aside until cool enough to touch.
Cut each potato lengthwise in half and scoop the insides out into a bowl. Place the skins cut sides up on a baking sheet.
While potatoes are baking prepare filling.
In a skillet, add small amount of olive oil; saute onions and garlic until translucent. Add ground beef and cook thoroughly; add ketchup, mustard, Worcestershire, hot sauce, salt and pepper.
Place cheeseburger mixture into each potato skin; sprinkle on cheese; return to oven to melt cheese, approx. 2 minutes.
Before serving garnish top with chopped pickles, tomatoes and shredded lettuce.
