French Onion Pasta
Ingredients:
- uncooked penne pasta - 2 c
- chicken stock - 1 - 1 1/2 c
- Onion Soup Mix - 1 packet
- shallot, finely diced - 1
- cloves of garlic, mashed - 2
- marsala wine - 1/2 c
- light cream - 4 T
- flour - 1 T
- shredded mozzarella cheese - 1/4 c
- olive oil - 1 T
Instructions:
Cook pasta per package directions, set aside, keep warm.
In a saucepan, heat oil, add scallions and garlic, stir continually until soft and fragrant. Add wine, scraping the bottom of the pan to remove any stuck on pieces of onion. Add chicken stock and soup mix, cook on low for 20 minutes. Stir in flour, whisking continually until thickened. Mix in the light cream. Add pasta to sauce, stir well.
Pour into an oven safe dish. Sprinkle top with mozzarella cheese. Broil for a few minutes until cheese gets a little crispy.
