Hawaiian Meatballs
Ingredients:
- lean ground beef - 1 1/2 pounds
- graham cracker crumbs - 2/3 cup
- onion, minced - 1/4 small
- egg - 1
- salt - 1 1/2 t
- ground ginger - 1/4 t
- milk - 1/4 cup
- olive oil - 1 T
- brown sugar - 1/2 cup
- corn starch - 2 T
- pineapple tidbits, drained, reserving juice - 15.25 ounce can
- white vinegar - 1/3 cup
- soy sauce - 1 T
- green bell pepper, diced - 1/2
- cooked rice -
Instructions:
In a bowl mix together beef, cracker crumbs, onion, egg, salt, ginger and milk; shape into 1 inch balls. Heat oil in a frying pan, add meatballs and brown. Remove, keep warm.
In a bowl mix together cornstarch and sugar. Add pineapple juice, vinegar and soy sauce, stir until smooth. Pour into frying pan; cook until thickened. Add meatballs, pineapple and green peppers; heat through. Serve over rice.
