Honey Mustard Chicken with Roasted Potatoes
Ingredients:
- chicken - 1 whole
- grainy mustard - 1/3 c
- honey - 1/3 c
- olive oil - 1/3 c
- butter - 1/2 c
- red potatoes - 3 pounds
- yellow onion - 1
- olive oil - 1/2 c
- salt - 1/2 T
- black pepper - 1/2 T
Instructions:
Place chicken in the crock pot. Whisk together mustard, honey, 1/3 c olive oil and butter; pour over the chicken. Cook on high for 6 hours OR low for 8 hours. Remove chicken from crock pot, pour part of the leftover juices over the chicken to serve.
Mix together potatoes, onions, 1/2 c olive oil, salt and pepper, pour into a greased 9 x 13 inch baking dish. Bake in a preheated 425 degree oven for 1 hour or until potatoes are golden brown and crispy, stir every 15 minutes.
