Italian Chicken and Vegetables
Ingredients:
- boneless skinless chicken breast halves - 4 - 4 ounce
- olive oil - 4 t
- salt and fresh ground pepper - to desired taste
- garlic, chopped - 2 cloves
- yellow onion, sliced thin - 1 small
- red bell pepper, julienned - 1
- carrots, julienned - 4 small
- basil - 4 large leaves
- Zesty Italian Dressing - 1/3 cup
- foil - 4 pieces
Instructions:
Place one chicken breast on each sheet of foil. Drizzle 1 t olive oil over each chicken breast. Season with salt and pepper. Layer garlic, onion, peppers and carrots on top and around chicken breast. Place a basil leaf on top of each chicken and vegetables. Spoon 1 - 2 T salad dressing over chicken and vegetables. Fold foil over the chicken; seal the packets closed.
Place packets on a baking sheet. Bake in a preheated 375 degree oven for 25 - 30 minutes, or until chicken is cooked through.
