Italian Sausage, Peppers and Pasta
Ingredients:
- whole wheat penne pasta - 12 ounces
- Italian sauage links - 1 pound
- green pepper, sliced - 1 small
- red pepper, sliced - 1 small
- yellow onion, sliced thin - 1 small
- red wine (merlot or pinot noir) - 1/2 cup
- tomato paste - 6 ounces
- tomato sauce - 8 ounces
- water - 12 ounces
- Italian seasoning - 1/2 t
- sugar - 1 t
- salt - 1/2 t
- grated Parmesan cheese -
Instructions:
Cook pasta in salted water, until al dente, reserve cooking water.
In a skillet heat 1 T olive oil over a medium-high heat. Brown sausages on all sides, until almost cooked through, remove, cut into ¼ inch slices. In same skillet add 1 t olive oil, sauté peppers and onions until slightly softened, about five minutes. Place sausage inn the skillet, deglaze with wine.
Stir in tomato paste, tomato sauce, water, Italian seasoning, sugar and salt. Bring to a boil, reduce heat to a simmer. Simmer for ten minutes. Add penne to the skillet, toss with sauce. If needed add a little pasta water to thin the sauce up. Season with salt and pepper and garnish parmesan cheese.
