Kielbasa and Vegetables
Ingredients:
- kielbasa, cut into 1/4 inch rounds - 14 ounce package
- green bell pepper, diced - 1
- yellow, red or orange bell pepper, diced - 1/2
- onion, diced - 1
- potatoes, peeled, diced - 3 small or 2 large
- olive oil - 3 T
- salt and pepper - to desired taste
Instructions:
In a cast iron skillet, heat 2 T olive oil over medium-high heat. Add potatoes, season with salt and pepper. Fry until golden brown and cooked through, about 8 - 10 minutes, stir a few times for even browning.
In a second skillet, heat 1 T olive oil over medium-high heat, brown the kielbasa. Remove kielbasa from the pan; set aside. Add peppers and onions to the skillet, season with salt and pepper. Cook for 5 minutes, or until softened, stir occasionally. Add potatoes and kielbasa to the skillet mix everything together.
Serve hot.
