Linguine with Arugula
Ingredients:
- linguine - 8 ounces
- olive oil - 1 T
- garlic, peeled, sliced thin - 5 cloves
- baby arugula - 2 cups
- fresh shredded Paarmesan - 1/2 cup
Instructions:
Cook pasta al dente in salted water per package directions.
While pasta is cooking, heat oil, in a saute pan, over medium high heat. Add garlic, cook for 4 - 5 minutes, or until it begins to turn just slightly golden. Remove from heat.
Drain pasta, add olive oil mixture and arugula, toss. Garnish individual portions with Parmesan cheese.
