Meatball Parmigiana
Ingredients:
- meatloaf mix (beef, pork, veal combo) - 1 1/2 pound
- garlic, roughly chopped - 4 cloves
- chopped parsley - handful
- bread crumbs - 1 cup
- shredded Parmesan cheese OR asiago cheese - 1 cup
- eggs - 2
- salt - to desired taste
- spaghetti sauce, your favorite - 2 - 24 ounce jars
- mozzarella cheese - 4 cups
Instructions:
In a bowl mix together meat, garlic, parsley, bread crumbs, Parmesan cheese, eggs and salt; form into small meatballs. Pour 1 - 2 T oil into a baking pan, place meatballs in pan, bake in a preheated 400 degree oven for 20 minutes. Remove and lower oven to 375 degrees. Pour some sauce in a 9 x 13 inch casserole dish. Place meatballs on top of the sauce. Cover with additional sauce, completely cover top with mozzarella.
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 20 minutes or until meatballs are cooked through and cheese is browning. For the last 4 minutes raise oven temp to 400 to speed the browning.
Serve with bread sticks or garlic bread.
