Oven Baked Chicken Fajitas
Ingredients:
- chicken breasts, boneless, skinless, cut into strips - 1 pound
- extra virgin olive oil - 2 T
- chili powder - 2 t
- cumin - 2 t
- garlic powder - 1/2 t
- dried oregano - 1/2 t
- salt - 1/4 t
- diced tomatoes, no salt added - 15 ounce can
- diced green chiles - 1 small can
- medium onion, sliced - 1
- red or green bell pepper, or combination sliced into strips - 1
Instructions:
Place chicken in a greased 13 × 9 inch baking dish. In a bowl combine oil, chili powder, cumin, garlic powder, oregano and salt. Drizzle spice mixture over chicken; stir to coat. In a bowl mix together tomatoes and green chiles, place tomatoes, peppers and onions over chicken; stir to combine. Bake uncovered in a preheated 400 degree oven for 30 - 35 minutes or until chicken is thoroughly cooked and vegetables are tender. Serve on tortillas with desired toppings.
