Pizza Pancakes
Ingredients:
- whole grain pancake mix - 2 cups
- Italian herb blend, divided - 3 t
- eggs - 2
- milk - 1 cup
- shredded mozzarella cheese - 1/2 cup
- shredded parmesan cheese - 1/2 cup
- sliced mushrooms - 1/4 cup
- sliced black olives - 1/4 cup
- chopped green bell pepper - 1/4 cup
- chopped red onion - 1/4 cup
- olive oil - 1 t
- chopped turkey pepperoni - 1/2 cup
- warm marinara sauce - 1/2 cup
- salt and pepper - to desired taste
Instructions:
Heat olive oil in a skillet over medium high heat. Add all the vegetables and cook 2 - 3 minutes, just until crisp tender. Season with 1 t Italian herb blend, salt and pepper. Remove from heat; set aside.
In a bowl, whisk together egg and milk. In a second bowl, stir together the pancake mix and 2 t Italian herb blend. Add egg and milk mixture to the dry mix; stir just until moistened. Gently fold in the cheeses, vegetables and pepperoni.
Spray griddle with cooking spray. Heat griddle over medium heat, use 1/4 cup of batter to make each pancake. Cook on one side until bubbles start to form on top, then flip and cook on the other side until cook through and golden brown. Serve with warm marinara sauce.
