Pulled Pork Stuffed Sweet Potato
Ingredients:
- pork loin - 2 pound
- chili powder - 1/4 t - desired taste
- garlic salt - garlic salt
- Coca Cola soda - 6 cups
- BBQ sauce - 3/4 - 1 cup - desired taste
- sweet potatoes - 8 large
Instructions:
Mix together garlic salt and chili powder, season pork. Pour a little soda into the crock pot, add pork. Add enough soda to just cover the pork. Cook on low for 8 hours..
Remove pork from crock pot and discard most of soda mixture, leaving a tablespoon or two of juice in the crock pot to moisten the pork.
Shred the pork, return pork to crock pot, stir in desired amount of BBQ sauce. Keep crock pot on low until ready to serve.
An hour or so before you are ready to serve, bake the sweet potatoes. Wrap potatoes in foil. Bake in a preheated 400 degree oven for 1 hour, until soft.
To serve, cut a slit in the sweet potato, lengthwise. Grab sweet potato on both ends and press together to open the sweet potato up. Fill each potato with pulled pork and drizzle BBQ sauce over top. Serve immediately.
