Spaghetti with Cheesy Broiled Tomatoes
Ingredients:
- spaghetti - 12 ounces
- large beefsteak tomatoes, each cut into 4 thick slices - 3
- olive oil - 3 T plus more for baking sheet
- kosher salt and black pepper - to desired taste
- mozzarella, grated - 8 ounces
- grated Pharmesan - 1/4 c
- cloves garlic, minced - 2
- crushed red pepper - 1/4 t
- torn fresh basil leaves - 3/4 c plus more for serving
Instructions:
Heat broiler. Cook pasta per package directions; drain and return to pot.
Lay tomato slices in a single layer on a lightly oiled rimmed baking sheet. Season with salt and pepper to desired taste. Sprinkle both cheeses over the tomatoes. Broil for 3 - 5 minutes until cheese is melted and golden.
In a saucepan, over medium heat warm olive oil, garlic and red pepper for 1- 2 minutes. Add garlic oil mixture, basil, salt and pepper to the pasta; toss to combine. To serve, place pasta on serving plate, top with tomatoes, sprinkle additional basil and Parmesan over top.
