Spinach, Sausage & Pasta
Ingredients:
- smoked sausage, sliced thin - 6 ounces
- olive oil - 1 T
- onion, diced - 1 medium
- diced tomatoes with chiles - 14.5 ounce can
- chicken broth - 2 cups
- pasta - 8 ounces
- fresh spinach - 3 cups
- shredded monterrey jack cheese - 1 cup
- whole green onion, sliced - 1
Instructions:
Add oil to a large skillet, saute sausage over medium heat until browned (5 - 7 minutes). Drain off grease. Add onion, saute until onion has softened (about 5 minutes). Add tomatoes and broth. Stir to combine.
Add uncooked pasta to skillet and making sure pasta is submerged under the liquid. Place lid on the skillet. Let mixture come up to a boil then turn heat to low; simmer for about ten minutes, or until pasta is tender. Stir once or twice while the pasta cooks to prevent sticking.
Stir in spinach, one cup at a time, until wilted. Keep the heat on while adding the spinach, so the liquid will continue to simmer and thicken. Sprinkle cheese over the top, cover and let it sit until the cheese is melted. Sprinkle green onion over top. Serve hot.
