Steak Stir Fry
Ingredients:
- beef tenderloin - 6 ounces
- teriyaki sauce - 1/2 cup
- sesame oil - 1/2 cup
- red pepper flakes - 1 t
- fresh squeezed orange juice - 2 T
- broccoli florets - 1 cup
- sugar snap peas - 1/2 cup
- sliced shiitake mushrooms - 1/2 cup
- chopped fresh cilantro - 2 T
- chopped dry roasted peanuts, opitional - 1 T
- soy sauce - to desired taste
Instructions:
In a bowl, whisk together teriyaki, sesame oil, red pepper flakes and orange juice. Add steak, cover with the marinade. Cover and place in refrigerator for 2 hours or overnight. Slice steak into 1/2 inch thick slices.
Coat a wok or large non stick skillet with cooking spray. Heat skillet on medium high, add steak and 2 T marinade, stir frequently until steak is cooked to desired doneness, about 2 - 3 minutes. Add vegetables, stir frequently, cook until crisp tender, 1 - 3 minutes. Serve over your favorite rice, garnish top with cilantro and peanuts. Season to desired taste with soy sauce.
