4 green peppers
1 lb. ground beef
1 onion, diced
1/3 c carrot, chopped
4 large green olives, sliced
1 can diced tomatoes, drained
1 clove Garlic, minced
2 T parsley, chopped
1 t salt
1 t black pepper
1/2 t paprika
1/4 t dried thyme
1/2 c cooked brown rice
1 c mozzarella cheese
Parmesan cheese and chopped parsley
In a skillet add beef, garlic, carrots and onion. Cook until meat is browned and vegetables are tender. Add tomatoes, olives, parsley, salt, pepper, paprika and thyme. Mix well and add the rice. Allow mixture to simmer for 10 minutes.
Cut the bell peppers tops off and remove the seeds. Stuff peppers with beef mixture and place upright in a small casserole dish.
Top with mozzarella cheese. Bake at 350 degrees for 25-30 minutes. Sprinkle parmesan cheese and parsley on top.
