Taco Corn Bread
Ingredients:
- corn bread mix - 8 1/2 ounce box
- egg - 1
- milk - 1/3 c
- cooked, taco seasoned meat - 2 1/2 c
- refried beans - 16 ounces
- sour cream - 8 ounces
- shredded Mexican Cheese blend, divided - 1 1/2 c
- chopped onion - 1/4 c
- tomato, diced - 1
- shredded lettuce - 1 c
- sliced black olives, draained - 2 1/4 ounce can
Instructions:
In a bowl, blend together corn bread mix, egg and milk. Spread into a greased 9 inch square baking dish. Bake in a preheated 350 degree oven for 15 minutes.
In a bowl combine taco meat and beans; spread evenly over baked corn bread. Combine sour cream, 1 c cheese and onion; spread evenly over meat mixture. Bake for another 20 - 25 minutes, until heated through and cheese is melted. Before serving sprinkle with tomato, lettuce, olives and 1/2 c cheese.
