1/4 c butter
2/3 c milk
1 package taco seasoning mix
2 1/2 c instant potato flakes (or use left over mashed potatoes and omit butter and milk)
1 pound ground beef
1/2 c chopped onion
1/2 c salsa
1 c shredded lettuce
1 medium tomato, chopped
1 c shredded cheddar cheese
Sour cream, optional
In a sauce pan, melt butter, add milk and 2 T taco seasoning. Remove from heat and stir in potato flakes; mix well. Press mixture into a 10 inch pie pan.
Bake at 350 degrees for 7-10 minutes until it turns slightly golden brown.
In a skillet, fully cook beef and onions, drain grease. Add salsa and remaining taco seasoning, cook until bubbly.
Pour into crust. Bake at 350 degrees for 15 minutes or until crust is golden brown.
Cool for 5 minutes. Top with sour cream, cheese, lettuce and tomatoes.
