Veggie Pizza
Ingredients:
- tomatoes, seeded, chopped - 4
- salt - 1 t
- red onion, sliced thin - 1 small
- fresh mozzarella, cut into small cubes - 10 ounces
- chopped fresh basil - 6 T
- fresh ground black pepper - 1/4 t
- pizza crust, (store purchased) - 2 - 12 inch
- grated Parmesan - 1/2 cup
- olive oil - 2 T
Instructions:
Place tomatoes in a strainer set over a medium bowl, toss with salt; let drain for 15 minutes.
In a bowl, combine drained tomatoes, onion, mozzarella, basil and pepper. Top each pizza crust with half of the tomato mixture. Sprinkle Parmesan over the pizzas; drizzle with oil.
Bake in a preheated 450 degree oven, directly on oven rack until cheese just melts for 7 - 9 minutes.
