Aloha Meatballs
Ingredients:
- lean ground beef - 1 1/2 pounds
- cracker crumbs - 2/3 cup
- onion, finely chopped - 1/4 cup
- milk - 1/4 cup
- egg, lightly beaten - 1
- salt - 1 1/2 tsp
- ground ginger - 1/5 tsp
- pineapple chunks, juice reserved - 20 ounce can
- brown sugar, packed - 1/2 cup
- apple cider vinegar - 1/4 cup
- cornstarch - 2 T
- soy sauce - 1 T
Instructions:
In a bowl, combine ground beef, saltine cracker crumbs, onion, milk, egg, salt and ginger; mix well. Shape beef mixture into rounded tablespoons size balls. Place meatballs in a foil lined pan, bake in a preheated 350 degree oven for 15 minutes.
While meatballs are baking, combine 3/4 cup pineapple juice, brown sugar, vinegar, cornstarch and soy sauce; mix well. Pour juice mixture into a skillet; cook over medium heat, stirring constantly until thickened, about 10 minutes. Add cooked meatballs and pineapple chunks to the juice mixture, stirring occasionally until heated through. To serve, thread a pineapple chunk and a meatball onto a toothpick.
