Asian Beef with Snow Peas and Mushrooms
Ingredients:
- soy sauce - 1/2 cup
- brown sugar - 5 T
- garlic, minced - 6 cloves
- ginger - 1/2 tsp
- rice vinegar - 2 tsp
- snow peas - 10 ounces
- olive oil - 4 T
- mushrooms, sliced thin - 10 ounces
- steak, sliced thinly (sirloin, flank, etc) - 1 pound
- cooked rice - 2 cups
Instructions:
Prepare sauce -- in a bowl, whisk together soy sauce,brown sugar, garlic, ginger and rice vinegar; set aside.
In a saucepan, bring water to a boil. Add snow peas, boil them for 5 minutes, drainwell; set aside.
Heat a large skillet until hot, add 2 T olive oil (oil should sizzle). Immediately add mushrooms, cook them on high heat, turning occasionally, until they brown. Spinkle on little salt on the mushrooms, midway through cooking. Remove mushrooms place in a bowl. In the same skillet, on high heat, add 2 T olive oil, (oil will sizzle right away.) Immediately add 1/2 the meat. Cook meat on one side until it browns. Flip meat over, and brown. Place in a bowl. Brown remaining meat. Once meat is cooked , place in skillet. Add snow peas and mushrooms, pour the sauce over top. On high heat, stir everything to combine, for about 1 minute. Turn off heat. Cover skillet with a lid. Serve over rice.
