Grilled Pork Kabobs
Ingredients:
- soy sauce - 3 T
- olive oil - 3 T
- garlic, minced - 1 clove
- crushed red pepper flakes - 1/2 t
- salt and pepper - to desired taste
- boneless pork loin, cut into 1 inch cubes - 1 pound
- beef broth - 14.5 ounce can
- cornstarch - 2 T
- soy sauce - 2 T
- brown sugar - 1 T
- garlic, minced - 2 cloves
- ginger - 1/4 t
- portobello mushrooms, cut into quarters - 3
- red onion, cut into 12 wedges - 1 large
- cherry tomatoes - 12
- bite size chunks fresh pineapple - 12
Instructions:
In a Ziploc bag, mix together 3 T soy sauce, olive oil, 1 clove minced garlic, red pepper flakes, salt and pepper. Add pork and turn to evenly coat with marinade. Cover, place in refrigerator for 3 hours.
Prepare sauce -- in a saucepan, combine beef broth, cornstarch, 2 T soy sauce, brown sugar, 2 cloves minced garlic and ginger. Bring to a boil, stir constantly. Reduce heat, simmer 5 minutes.
Heat grill to high heat and lightly oil grate. Thread pork cubes onto skewers, alternating with mushrooms, onion, tomatoes and pineapple chunks. Place skewers on grill and cook for 15 minutes, until meat is cooked through. Turn skewers often, baste with sauce while cooking.
