Cauliflower Sauce
Ingredients:
- butter - 2 T
- garlic, minced - 8 large cloves
- cauliflower florets - 5 - 6 cups
- vegetable broth or water - 6 - 7 cups
- salt - 1 tsp
- pepper - 1/2 tsp
- milk - 1/2 cup
- Parmesan cheese - to desired taste
Instructions:
In a skillet, over low heat, melt butter and saute garlic until soft and fragrant. Remove from heat; set aside.
In a large pan, bring broth to a boil, add cauliflower, cover and cook for 7 - 9 minutes or until cauliflower is fork tender. Do not drain.
Use a slotted spoon, place cauliflower in blender. Add 1 cup broth, garlic, salt, pepper, parmesan cheese and milk. Blend until sauce is very smooth, add more broth or milk to reach desired thickness. If sauce looks dry, add a little milk or olive oil.
Serve hot over meat, potatoes, pasta, toast, etc
