Country Fried Chops
Ingredients:
- bone-in pork chops ( 3/4-inch thick) - 6 - 8
- eggs, beaten - 2
- hot sauce - to desired taste
- flour - 1 cup
- paprika - 1 t
- Kosher salt - 2 t
- black pepper - 1 t
- vegetable oil - 1/4 cup
- flour - 3 T
- milk - 2 1/2 cups
- Kosher salt - 1/2 t
- black pepper - 1/2 t
Instructions:
Place a wire rack on a baking sheet and place in the oven set at warm temperature.
In a shallow dish, mix together eggs and hot sauce. In a zip loc bag combine flour, paprika, 1 t salt and 1/2 t pepper, mix to combine.
Season both sides of chops with 1 t salt and 1/2 t pepper. Dip each chop into the egg wash, let excess drip back into the dish. Place 1 chop at a time into zip lock bag and shake the bag to cover each chop with flour. Remove chop, place on a plate; repeat with remaining chops.
In a skillet heat oil over medium-high heat. Place a single layer of chops in the hot skillet, fry until well browned on each side, about 5 minutes. Remove from skillet and place on the baking sheet in oven. Repeat with remaining pork chops.
Prepare gravy -- whisk in 3 T flour to the pan drippings, cook for about 2 minutes. Whisk constantly, while slowly pouring in the milk, whisk until mixture has thickened to desired consistency. Add salt and pepper.
Remove chops from oven, place on serving plate, pour some of the gravy over the top of chops. Place remaining gravy in a bowl and serve with the chops at the table.
