10 pound prime rib roast
10 clove garlic, minced
2 T olive oil
2 t salt
2 t ground black pepper
2 t dried thyme
Place roast in roasting pan with fatty side up. In a bowl combine garlic, oil, salt, pepper and thyme, spread mixture on fatty side of beef. Let roast set at room temperature for 50 minutes.
Bake in a preheated 500 degree oven for 20 minutes, reduce oven temperature to 325 degrees, roast for 60 – 75 minutes. Internal temperature should be 135 degrees for medium rare. Let roast rest for 10 – 15 minutes before carving.
